Planning ahead

Last night at dinner, Mike like always, thanked me for cooking.  He is always very appreciative of everything I do and is great about telling me.  He said, thanks for dinner, I appreciate that you cook every night.  Well, and that got me thinking.  I do cook every night.  We never have leftovers, I never cook ahead and if we really need a fast go to meal, I still make some type of sandwich with a side, but again every night I make something.
Right now it is ok.  I still have time and Evelyn is usually good about either helping (as much as a 2 year old can help) or she will play and watch tv while I am getting things together.  When the new little man joins our family in just 2 months, I don't know if I will have the time to cook every night like I do now so that really got me thinking about planning ahead.
This is what I did this week and I will see how well it works and hopefully come up with a system so that I have dinner on the table every night and also have time my main responsibility, the little ones.

Last night we had homemade pizza with salad.  I roasted double the amount of vegetables (zucchini, yellow squash, mushrooms, onions) and I cooked double the amount of italian sausage.  I used half on the pizza and put the extra away to use in pasta on Thursday.  I also washed all the lettuce, and made a big salad to have in the fridge.  I cut lettuce for taco's for Friday, and cut lettuce for hamburgers for today.  I also seasoned and pattied the burgers and froze the extra ground beef.    So, with just an extra half hour of prepping I have dinner pretty started for 2 days and a little bit of chopping done for another day.

I am going to look for other ways to plan ahead and hopefully I will end up having more time to enjoy the day and less time looking at the clock to get ready for dinner.
