What I wore

Fresh granola in the oven, a hot cup of coffee and a trip to Ikea with friends later. It's a good day.
On another note I didn't do a great job taking pictures of my outfits. 
I only took one. 
It was on Sunday and I went to sign Evelyn up for preschool. Eek!  Crazy I know. Can you believe she will be starting school this year?

Yum yum, lots of good meals planned this week.

Eggs over bacon with spicy mayo
Spinach artichoke chicken
Pepperjack pizza 

I'm also attempting to make bread again and trying homemade pizza dough. I'll let you know how that goes. 

Bread making

My dad gave me his bread maker last year. When I first got it I was making bread a few times a month. 
Then life got busy, the bread machine went into the basement and then we moved and it was packed up. 
Well I finally pulled it out of the box this morning and made some whole wheat bread. It was a new recipe and it did not turn out. 
Maybe I measure wrong. So I'm back to the drawing board and have been looking online for a good recipe. 
I'll keep you updated as to what I find. If anyone has a great recipe I'd love it if you could send it my way.

Meal planning Monday and a challenge

The new year is here and I am ready to make some changes to the way our family eats.  Since the winter has come we have been eating more convenience foods and have gotten away from some of our healthier habits that we have in the summer months.  In the summer we are out and about and I do a good job of packing snacks and lunches.  Lately, we have been going through the drive thru more than once a week.  I feel tired and I know that the effects on my body are going to keep getting worse.
I have friends doing the Whole 30 program.  I did a ton of research on it although the results seem amazing, I don't think it is a program that I could do long term.
In the past I have loosely done the 100 days of real food program and I did like it.  It took a lot of planning but it wasn't too hard.
So, I think we have to get back to that plan.  I have re read the website and meal planned around eating fresh and real food.  I also bought healthy snacks and feel excited to get back to eating healthy.
This week's menu looks like this.

Whole Chicken in the Crock Pot

I am going to use this for 2 meals.  One night will be roasted chicken with roasted veggies on the side.

Then I am going to use it a second time for mexican lettuce cups.

Breakfast- Scrambled Eggs, Bacon and Fruit

Tortilla Pizzas

White Chicken Chili ( I made this a couple of weeks ago and really liked it.  I am going to make extra and freeze some)

I also plan on making home made granola this week and some muffins and breakfast cups.

So who is with me?  Anyone want to try the 100 days of real food program?  I know it seems like a lot but really it is all about making changes that you can stick with for life rather than just for a short time.

Monday meal planning

Meal planning can be daunting but I have to do it. I need to have a plan so I am not scrambling around at 4:00 when both kids start to have melt downs and decide on dinner.
I meal plan on Sunday morning and try to shop in the afternoon. 

I look through the ad and see what's on sale and try to plan around that. Then I make a list for snacks and pantry essentials that we might be out of. 

So this week the menu looks like this:

Turkey chirizo tacos
Marinated chicken and roasted broccoli
Pioneer woman meatballs 
Sante fe bowls with chipotle cream dressing 
Pita pizzas 

We always have a salad with dinner too. For lunches this week we will make spaghetti, cheese with lunch meat and peanut butter sandwiches. We have 2 lunch play dates this week so we will be eating out. 

How do you plan for the week?  I'd love to hear some tips to make thing easier.

Ok, ok, I know these aren't great pictures but can you believe they were taken by a 2 year old?  
Evelyn is always playing with her Minnie Mouse camera and having us pose for pictures. Last night she asked to use my camera so, I let her and this is what she shot. They are pretty good. A bit more focusing and a bit less moving and I think she might have a talent. 




Baby, it's cold outside

It's been pretty cold here in Michigan. So, we've been staying inside and enjoying some pj time and doing lots of cleaning and organizing. 
Last night Mike and I were up watching the game and he checked the weather. It said it felt like 37 degrees below. I just had to step outside and see what that feels like. And well, I can say that is was really really cold. Mike snapped a quick picture from inside. 







Simplify, making 2014 count

I am participating in a blogger link up called, "Making 2014 count". With this link up we are asked to pick just one work to describe what 2014 will mean for us. 
Well after lots of thought and debate I have decided that my one word will be, Simplify
This year I plan to just simplify my life.  By this I mean, not overbooking daily activities. Taking time to enjoy our days. I want to simplify life by buying less things and getting creative with the things we already have. For the month of January I am going to get the house organized and get rid of things we don't use. I simply want to live more simple this year. 
I could have chosen so many different words but I think simplify sums it all up for me.  Taking some time to enjoy my family and friends and living a simpler life. 
What is your word for making 2014 count? 
 



My stay at home mom uniform

I know I am a stay at home mom but we are out and about everyday so, I try to keep my outfits easy and of course kid friendly. Since I am still nursing, my tops have to have easy access. I wear infinity scarves and use them as nursing cover ups. 
My sister in law is the best and she has made me quite a few of them. They really work great and are very easy to coordinate with tanks and cardigan. 
I pretty much live in skinny jeans and since it is so cold here I wear my Uggs everyday. I know most people don't think they are fashionable but I love them and will keep wearing them. I also have 4 pairs so I can always change the up depending on my outfits. 
I was planning on buying a new pair of Melissa Frye boots this year.  Mike even gave me the money for a "bonus" but, I knew that I would probably just end up wearing my good ol Uggs.  So I didn't pull the trigger on them. 
Anyways, here's an example of my go to daily outfit.

It's a winter wonderland

Living in Michigan means we get lots of snow during the winter. I love snow.  I should say that again, I love the snow. I have never minded driving in it and I especially love getting outside and playing in it. The only downside to winter really is I can't run outside. I love wearing boots and cozy sweaters and sitting around a fire inside. 
Winter is a great time and I am especially loving it this year because Evelyn and I have had so much fun playing outside. Last night we went out while Mike snow plowed and we played with the sled. We also made snow angels and tried to make a snow man but the snow was not pack able.

One on one time with Evelyn

I make it a point to everyday spend some one on one time with Evelyn. We usually do it during Jacks first nap. A few things we did last week were, make a disco ball for New Year's Eve. I took a big foam ball and we spent over an hour glueing jewels on it.  It turned out really cute and Evelyn had a great time playing with the glue.
Another day we read a Charlie Brown book and counted the characters on each page. We also played Legos and made big towers.

 Happy New Years everyone. I'm excited about what 2014 has in store. I'm not much for resolutions but I do plan on changing a few habits this year. Like most people in January, I'm going to make it more of a priority to work out. I'm also thinking about doing a whole 30 challenge. I've only just begun looking at meal plans so I need to do some more planning and make sure I can do it while nursing. I also am looking forward to do some much needed organizing in our home. I still have boxes of kitchen supplies packed up from our move. 
Lots will change this year. Evelyn will start preschool and Jack will be walking by the end of year. We also have some pretty fun travel plans in the works, including Punta Canta.  
Here are a few pictures from us last night ringing in the New Year. I did have both kids sleeping but at about 11:00 they both woke up so we let them stay up to watch the ball drop. 
Hope the new year brings you all lots of happiness!

New Year's Eve dinner

For my family, the holidays are a lot about eating good food. We love to entertain and around the holidays we tend to go a bit overboard. For our New Year's Eve dinner we made, avacado hummus for a snack while we were cooking.
 Then for dinner we had garlic redskins, Brussels sproats with bacon and prime rib with au jus and horseradish sauce. 
For dessert we had cheesecake planned but no one actually ate any because we were all so full.

A look back at 2013

What a year. I was pregnant for the first half do the year and then in July our new addition made his arrival. It's been a whirlwind with the 2 kids and our family couldn't be happier. We are very blessed and have a lot to be thankful for.
