Meal planning Monday and a challenge

The new year is here and I am ready to make some changes to the way our family eats.  Since the winter has come we have been eating more convenience foods and have gotten away from some of our healthier habits that we have in the summer months.  In the summer we are out and about and I do a good job of packing snacks and lunches.  Lately, we have been going through the drive thru more than once a week.  I feel tired and I know that the effects on my body are going to keep getting worse.
I have friends doing the Whole 30 program.  I did a ton of research on it although the results seem amazing, I don't think it is a program that I could do long term.
In the past I have loosely done the 100 days of real food program and I did like it.  It took a lot of planning but it wasn't too hard.
So, I think we have to get back to that plan.  I have re read the website and meal planned around eating fresh and real food.  I also bought healthy snacks and feel excited to get back to eating healthy.
This week's menu looks like this.

Whole Chicken in the Crock Pot

I am going to use this for 2 meals.  One night will be roasted chicken with roasted veggies on the side.

Then I am going to use it a second time for mexican lettuce cups.

Breakfast- Scrambled Eggs, Bacon and Fruit

Tortilla Pizzas

White Chicken Chili ( I made this a couple of weeks ago and really liked it.  I am going to make extra and freeze some)

I also plan on making home made granola this week and some muffins and breakfast cups.

So who is with me?  Anyone want to try the 100 days of real food program?  I know it seems like a lot but really it is all about making changes that you can stick with for life rather than just for a short time.
