Layered Taco Casserole recipe

Let's talk casseroles.  I think people tend to have a love/ hate relationship with casseroles.  I personally love them.  I grew up eating them.  To me they are pure comfort food.  Yummy different flavors all in one big dish.  I mean who doesn't love that.

Well, I will tell you who.  My husband.  He is not a fan of casseroles and not for the reasons you might think.  He doesn't like them because he has no self control when it comes to eating them.  If I make a 9x13 pan, he will eat more than half of it by himself.

So, we don't eat many casseroles.

Except for this casserole.  I came up with this recipe while I was trying to do some make ahead meals.  It is easy to make, and easy to freeze.  Best part too, is if you break it down to what it essentially is, it's just a bunch of taco's.  So even if Mike eats more than half of it, than he's really only eating 4 or so taco's, which isn't really that bad.

Here are the step by step directions.

First I cook 1 pound of ground turkey and a half an onion that was diced. Then I add in the taco seasonings and 1 can of rinsed black beans.

Then I shred up a block of cheddar cheese.  Freshly shredded cheese is my favorite but you could use a pre shredded package.

Next I spray an 8x8 dish with a non stick spray, then put down a layer of flour tortilla's.  You can buy big ones or just cut up the smaller size ones to make some sort of even layer.  

Then I put down a layer of ground turkey, then some shredded cheese, then dollops of sour cream and salsa.  

Just keep doing layers until everything is used up.  I usually get 3 layers and end it on the top with a layer of shells, then some salsa and lots of cheese.  I made 2 8x8 pans while I did this.  One I cooked right away and the other one I froze.  

And here is the cooked dish.  You can see the layers and all of the melted cheese in between.  

When I serve this I put a little lettuce and a little bit of sour cream and taco sauce on top. 

 I had 2 pieces and Mike ate the rest of the dish.  This is one dinner that we never end up having left overs with.

Layered Taco

1 Pound Ground Turkey (or Ground Beef)
1/2 Diced onion
3 Tablespoons of taco seasoning (recipe below) or 1 Package of Taco seasoning
1 Can Rinsed Black Beans
1 Cup Salsa 
1 Cup Sour Cream 
8 oz Shredded Cheddar Cheese 
6 Taco Size Flour Tortilla Shells

Pre heat oven to 350 degrees.  Spray an 8x8 pan with a non stick cooking spray.

Start with a layer of shells in a greased 8x8 pan.  Then put down a layer of meat then salsa and sour cream then cheese.  The last layer will be just the flour tortilla's with salsa and cheese on top.  

Bake for 350 degrees for 30-35 minutes.  Let set for at least 10 minutes when it is taken out of the oven to allow the layers to set.  

Taco Seasoning
1 Tablespoon chili powder
1/4 Teaspoon garlic powder
1/4 Teaspoon onion powder
1/4 Teaspoon crushed red pepper flakes
1/4 Teaspoon dried oregano
1/4 Teaspoon paprika
1 1/2 Teaspoon salt
1 teaspoon black pepper
