Zucchini noodles with chicken sausage

This was a pretty simple dinner but it was oh so good. 

I cooked some basil, feta and spinach chicken sausage and regular spegetti noodles. I made zuccini noodles by thin slicing the zuccini with a vegetable peeler and cutting it into thin strips. 
I blanched them in the boiling noodle water for a minute. I then just tossed them with the noodles. 
I use ragu chunky, heart smart sauce. I love it and it is so easy. 
It was a great change from our regular pasta dishes.

I'm not trying anything new this week. I'm keeping dinners simple because everyday is really busy.

Marinated grilled chicken with salad (I'm making double and we are having this twice)
Breakfast for dinner, eggs, sausage and toast with fruit
Out to dinner for Mikes birthday 

Weekend plans

The weekends pretty busy as usual. Swim lessons today for Evelyn while I run and Mike swims laps. Then we are patio furniture shopping. Hopefully we find something today, the selection is going to start getting low. 
Then off to the grocery store to pick up something for dinner. I'm thinking thick cut pork chops with mango chutney, roasted Brussels sprouts and baked potatoes. 
Lastly Mike has a work trip next week so he will probably finish his packing and I'd like to do a couple loads of laundry.

Easter

I didn't get a chance to tell you about our Easter. Well it was a great day. Easter is one of my favorite holidays. We do lots of eating and lots of socializing with family. 

This year we hosted so it was nice to have everyone over. I decorated the house with lots of plastic eggs and had an Easter garland on the stair case. 

Evelyn had a great time with her basket. The Easter bunny brought her bubbles, a slinky, goldfish, a stuffed bunny, hello kitty tatoos, twizzler flavored lip gloss, side walk tatoos to color, a new ball and of course a chocolate bunny. Jack got two new balls, bubbles, puffs, a slinky, a lamb rattle, and a chocolate bunny. 

They found eggs in the morning too. 

Both the kids had on cute Easter outfits but I'm not sure I got any pictures of them. I'll have to check Mikes phone.

First baseball game

We took the kids to their first Tigers baseball game today. 
We sat in the Champions Club Suite.  I was suprised at how much Evelyn actually watched the game. She was clapping and when the players left the field between innings she would ask if it was over. We didn't stay the whole game and when we were walking to the car she asked to go back. 
We let her pick out a souvenir and she decided on the mini bat. Pink of course. She calls it her batting club. Pretty sure she's having trouble keeping all of her sports in order since she watches so many with Mike. 
Jack enjoyed being held for the first 20 minutes and then made it his mission to attempt get on the floor to crawl. Thankfully I brought a big snack bag of puffs and he was distracted by eating those.  
It was a great day.

Salami breakfast egg muffins

Salami egg muffins 

First I sprayed a muffin pan with non stick spray. Then in each muffin I put some salami, tomato, brocolli and cheese. 

Them I beat 8 eggs and a dash of milk together. Seasoned them with salt, pepper and some hot sauce and poured a little in each muffin. 


I baked them for 15 minutes at 350 degrees. 
These are great warm for breakfast but I also keep extra in the refridgerator to eat cold as a high protein snack.

This was a big week for Jack. 9 months!
He is a baby on the move. Crawling and pulling himself up. Not giving mama a break. Oh and he has decided he does not need more than a 30 minute nap and when the sun goes down the all night buffet opens. 
Busy busy ultimately describes him right now. He is weighing in at 20 pounds and is 29 inches tall.

It is 4:15 am and both kids are up. Hopefully after a little milk and some Sesame Street they both go back to bed for a few hours. Oh and Jack is on the move now and he loves crawling on Evelyn so now she's constantly saying, get him off of me mom. 

My mother in law is coming into town at the end of the week and we are hosting Easter so I have lots to get done. 

Meals this week are
Ranch chicken wraps with green beans
Turkey tacos with brocolli
Breakfast- sausage and eggs with fruit
Brocolli cheese soup and Caesar salad
Take out soup and bread 

Boba Air Product Review

Both of my children love to be carried.  Evelyn is 3 and still asks to be carried all the time.  Jack still needs to be carried and loves being held and cuddled.  Since I still need to get things done around the house, I baby wear.  I have a bunch of different carriers and use them all for different reasons.  

A few weeks ago I purchased a Boba Air.  I was in search of an easy to put on soft structured carrier that I would be able to use with both Evelyn and Jack.  I also wanted something easy to travel with.  Most carriers are bulky and big because they have a lot of padding and they don't fold up well.  

The Boba Air has turned out to be a perfect fit.  I love how easy it is to put on.  It is ergonomically correct too so I know both kids are not getting any extra hip stress while in it.  Most carriers, like the Baby Bjorn, allow kids legs to just dangle.  After time that can become really bad for their hips.  Carriers like that also allow children to face out, which seem like a good option but really it can be bad for their back since it is tilted at an odd angle while leaning up against your body.  The Boba Air is able to do the back carry so if Jack is frustrated and wants to look forward I can just wear him on my back and again it is easy to get him into this position by myself.  

The material on the Boba Air is really light weight so unlike most of my wrap style carriers this allows air to circulate and I don't get as hot wearing it.  It is going to be perfect for the summer months.  

It has a nice broad waist band that sits right above my hips so it is secure and doesn't slip down.  No re adjusting while either of the kids are in it.  It also folds up super compact which is great for just putting it in the diaper bag and having it available all the time.  









Rise and shine burger

Today we experimented with burgers. I've had a burger with an egg on it and was looking forward to recreating it. 

It was a really nice day out so we decided to grill the burgers. Then I topped them with 2 pieces of bacon, American cheese, a sunny side up cooked egg, lettuce, tomato and red onion. 

It was amazing. The key is to cook the egg so it's still runny. Then when you cut into it the yolk goes all down the burger. 



Mini meals

Here is my first edition of mini meals. A new series where I will showcase kid friendly meal ideas. 
Below are pictures of the lunch I packed today for our trip to the zoo. 


These are peanut butter and jelly bites. Evelyn won't eat an actual sandwich so I make a sandwich and cut out little circles. 


Next are these great little connecting cups. They stack so I fill each of them with different snacks. These have carrots, strawberries, animal crackers and pretzel goldfish. 



This is what it looks like all packed up. The reusable sandwich wraps are great and double as a placemat. 


Mini Banana muffins

I'm always trying to come up with new recipes that Evelyn will actually eat. She doesn't usually eat bananas but she loved these muffins. Jack does too but he eats pretty much everything. 
The recipe was easy and I had everything in the pantry. 

Makes 24 mini muffins

Preheat oven to 350 degrees

Ingredients:

3 large or 4 small very ripe bananas
1 1/2 cup flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
4 tablespoons melted butter
Handful of chopped pecans or walnuts, optional

Directions:

Smash the bananas really well into a bowl. Then add the rest of the ingredients. Stir really well. 
Spoon into a mini muffin pan that has been well coated with cooking spray. 
Bake for 12-14 minutes. 



Pretty simple and pretty delicious.

I'm back and happy to report that everyone is feeling better. Jack's top tooth even popped through so he is sleeping better now. 
This week starts a couple of new spring classes for Evelyn so we are starting to get pretty busy with scheduled activities. I did all the meal planning for lunches and dinners yesterday and should be all set for the week. I'm trying not to go to the store during the week. It will hopefully help me stay on budget because I always buy more than I need if I make a second trip. 

So here's the plan for this week. 

Chicken and bacon ranch salad with garlic bread 
Turkey tacos with a side salad
Spaghetti squash with meat sauce and Cesar side salad
Breakfast, eggs and sausage with fruit 
Take out soup

Lent is almost over but we might keep up the take out soup tradition for Fridays. 

Sick little ones

Just a quick update. Everyone caught a stomach virus. It started with Jack Saturday night, then spread to Evelyn Sunday night.  I got it Monday and Mike came home sick on Tuesday. I'm feeling great today but everyone else is still a bit under the weather. 
Poor little ones. They are just miserable. 
I'll be back to blogging regularly by the end of the week. Right now I'm concentrating on giving lots of snuggles, washing lots of laundry and disinfecting the house. 
A big thanks to Grandma for helping out the past 3 days. Don't know what I would have done with out her.
