We had a great weekend.  I went to the baseball game with friends on Saturday and ended up staying out way too late.  Back to before mom was mom times and I realized I am not as good as I once was.  Ha.  I paid for it on Sunday.  Tired and hungover was how I felt the whole day.  I was pretty miserable.  Mike went to the baseball game on Sunday with his friends so I had the kids by myself all day.  We tried to stay busy outside and took a long walk.  Everyone went to way too late and I couldn't wait to get some rest myself.
Monday we just hung out as a family.  We cleaned up the house, weeded the yard and played outside the whole day.
I thought the kids would fall right asleep but they stayed up until almost 11:00.  I am not sure what I am doing wrong but, they just fight sleep.  It is exhausting.

Meal planning Monday

Vacation starts this week and I am excited. I have lots of packing to finish up so I'm skipping meal planning.
We are going to be eating up some food we still have in the house. 
I'm going to be grilling brats and chicken. We have ribs from the weekend left to eat too. For sides I'm using up the vegetables by roasting them and making a side salad.

Weekend Plans

I love long weekends.  Evelyn has swim this morning.  She has been really loving these classes.  I am hopeful that she has learned a lot and taking her to the pool this year will be easier.  She has learned a lot of safe entry techniques and it has helped her realize that the water can be dangerous.
After swim we are heading home for some lunch and much needed nap and rest time for the kids.  Then...I am going out.  I know it is crazy but I am having a girls day out and we are going to the Tigers baseball game.  I am so so excited.  I haven't been to a game with just the girls in years.  Mike was so great and got us tickets 4 rows behind home plate.  So, tune into the 4:00 game and you will see us all on TV.  I plan to enjoy lots of sun and lots of beer and of course lots of girl talk.
Sunday Mike is either going to go golfing or maybe head to the game with some of his friends and Monday we will spend the day relaxing.  Probably do some BBQ'ing and playing in the yard with the kids.
Our community pool opens this weekend too.  I might take the kids down for the BBQ and let them play at the playground.

This is a sample of what we packed for our day at the zoo this week. Jack is really starting to eat now so I've been packing food for him. On this day he ate cottage cheese and had bites of my sandwich and water. I also bought Evelyn a strawberry milk. It's her treat that she chooses when we go.

Right now I am using this lunch pack I got at Target last year but, I am on the hunt for something a little nicer.  I really like this size but haven't found anything that seems like the right fit yet.  

Instant Homemade Pancake Mix

We are early risers at our house.  By 6:00 we are usually up and have started making breakfast.  I try to get a cup of coffee started first.  Thank goodness for the Keurig. 

This morning was an especially early morning and Evelyn asked for pancakes.  She is not a big eater so if she asks for something special I usually make it.  Jack loves pancakes too so this is a win win breakfast for me.
Each time I make them though I have to pull out all of the ingredients and with Evelyn "helping" there is usually flour all over the kitchen.  So, I figured out a way to mix ahead all of the dry ingredients and then just add in the needed wet ones.

Here it is.

Dry ingredients:

6 Cups flour
1 1/2 teaspoon baking soda
3 teaspoons baking powder
1 tablespoon salt
2 tablespoons sugar


Wet ingredients to have on hand:

1 Egg
1 Cup milk
2 Tablespoons melted butter


To Make

Add 1 Cup of the dry instant pancake mix to the wet ingredients.


Pretty simple and it will be nice to not pull out all the dry ingredients every time the kids ask for pancakes in the morning.

I stored mine in a big mason jar to keep it fresh.  From what I read it should last about 3 months.

Oh and a side note, I think I am going to start adding one of these pre mixed jars to my meals that I bring new mama's.  It looks nice in the Mason jar and everyone probably has the wet ingredients on hand. 





Meal planning Monday

I am trying to find some easy kid friendly meals. Around 4:00 everyday both kids start to loose their minds because they are hungry so, I am pre making some quick starts to meals that I can give them right away.  Then I can finish dinner while they get started.

I pre baked sweet potatoes, cooked edamame, cut up cucumbers and carrots and made a pasta that can be heated up quickly.
The pasta dish was simple.
I cooked thin noodles then added chicken broth, a bit of milk, fresh spinach and parmesan cheese.

This week we are having:

Corned beef reuben's with a side salad
Turkey burgers (still looking for a good recipe) and asparagus
Taco's with re fried beans and roasted zucchini
Take out soup and salad from our gourmet market down the street

Mike is out of town one night so I will probably just make grilled cheese that night with some fruit.

I am also testing out a make ahead pancake mix that I will post later when I make sure it is a keeper.


Weekend plans

Today is Saturday so we are on our way to swim lessons. Jack has a cold so Mike stayed home with him. Hopefully he takes a long nap. After swim I need to go to Target to get a birthday present for a birthday party tomorrow. 
The birthday is at a hands on museum so it should be a lot of fun for the kids tomorrow. I'd like to fit in a long run these next 2 days too. I've been training to do a 10k and I only have about a month to go. If the training goes well I'd love to do a half marathon in October. We will see about that though. 
 Other than that we done have any plans. I'd like to get a few loads of laundry done and do lots of relaxing. Mike is done with vacation this weekend and I'm not looking forward to Monday. It has been great spending so much time together. He was able to go to all of Evelyn's activities his week and she loved having him there. 
 I'm going to soak up as much family time as I can before the weekend is complete.

Me and my lady finally able to wear sandals.  Evelyn is finally getting into wearing flip flops.  I am not sure why but, I have really looked forward to this milestone.  Ha ha

I made it

I did it. 6 full days and 6 nights Mike was on vacation and I had the kids all by myself.  I can't believe I made it without losing my sanity.  He was home yesterday for the first full day and it was great.
He travels a bit for work but, it is usually just for 3 or so days at a time.  This trip he took was a vacation, a father son trip to Key West.
I am happy he was able to go and I am very happy he is home now.
The kids were great and we stayed busy doing activities and getting out of the house each day.  Thankfully the weather seems to be finally getting better.  With the exception of 2 rainy afternoons it was sunny and warm every day.  Oh and I should also mention I cooked every day and we avoided fast food.  Which is usually my go to a couple of meals while Mike is out of town.
Well, back to normal life and my husband being home to share it with us.

Meal planning Monday

Tonight I made chicken and orzo. It was really good. I made orzo and peas for the kids, which by the way they both ate a whole bowl of, then I added grilled chicken, cucumbers, cheese and tomatoes to and some Greek dressing. It was great and really simple. 

Tomorrow I'm either making or ordering pizza 
Wednesday we are grilling brats that my parents give me extra of from our mothers day BBQ. I'll make some sort of veggie side, probably a salad
Thursday and Friday are still being decided. Mike has those days off so we will probably make something a bit more time consuming since we will have time to cook. 
I'm also baking oatmeal rasin cookies with Evelyn tomorrow. Oh and I'm going to slow cook corn beef for sandwiches this week too.

Friday night I took the kids to a friends house. Both of our husbands were away so we ordered pizza, the kids played and we enjoyed a beer. The plan was to leave at bedtime so they would sleep and I'd put them in bed when we got home. 
Well in true, I'm not sleeping fashion, both of them were awake when I pulled in the driveway and they didn't go to bed until 11:00. 
Saturday morning we have Evelyn's swim lesson and then I need to do some shopping. 
Sunday we are going to Grandma and Poppas for a BBQ to celebrate mothers day and my dad's birthday.

Hopefully the weather continues to warm up. I have grilling on my mind this week.

Grilled chicken with roasted zucchini and squash and a new bruschetta recipe 
Left overs 
Out to eat, probably pizza

I'm making more strawberry bars for snacks. I also want to try a new blueberry muffin recipe this week.

We are at swim class this morning. Evelyn has learned so much. I'm excited for her to get to use her swimming skills this summer. 
After swim class we are headed home for lunch and rest time. 
This afternoon we are going to my brother and sister in laws house to celebrate my neice, Amelia's 3rd birthday. It is going to be so much fun. I'm really looming forward to it. The girls just love playing together and it's great when we can get the whole family together. 
I'll post some pictures later. 
Tomorrow we will probably get some things done around the house. Hopefully I can get some grocery shopping done.

Where is summer? It's still cold but I'm still wearing my Sperry's. It's May and I've been waiting all winter. 

In other news I had my hair cut and blonde highlights done. It feels a bit short and I'm not loving the blonde but everyone else does.
