Instant Homemade Pancake Mix

We are early risers at our house.  By 6:00 we are usually up and have started making breakfast.  I try to get a cup of coffee started first.  Thank goodness for the Keurig. 

This morning was an especially early morning and Evelyn asked for pancakes.  She is not a big eater so if she asks for something special I usually make it.  Jack loves pancakes too so this is a win win breakfast for me.
Each time I make them though I have to pull out all of the ingredients and with Evelyn "helping" there is usually flour all over the kitchen.  So, I figured out a way to mix ahead all of the dry ingredients and then just add in the needed wet ones.

Here it is.

Dry ingredients:

6 Cups flour
1 1/2 teaspoon baking soda
3 teaspoons baking powder
1 tablespoon salt
2 tablespoons sugar

Wet ingredients to have on hand:

1 Egg
1 Cup milk
2 Tablespoons melted butter

To Make

Add 1 Cup of the dry instant pancake mix to the wet ingredients.

Pretty simple and it will be nice to not pull out all the dry ingredients every time the kids ask for pancakes in the morning.

I stored mine in a big mason jar to keep it fresh.  From what I read it should last about 3 months.

Oh and a side note, I think I am going to start adding one of these pre mixed jars to my meals that I bring new mama's.  It looks nice in the Mason jar and everyone probably has the wet ingredients on hand.
