I've bee doing some spring shopping for Jack and the boy options are so cute this season.  Here is one of his new outfits.  

Shirt is from Carters, under t shirt is from baby Gap, cargo pants from Old Navy and his shoes are adidas  




He looks like such a little man in these pictures.  20 months sure went by fast.

Strawberry Bread Recipe

Strawberry's are at a great price right now so we have stocked up.  I may have bought a few too many so I decided to put them to good use.  
It has been a while since I have baked anything and the kids were excited to help.  
I found his recipe a long time ago and have used it many times and it always comes out great.  

Strawberry Banana Bread


1 1/2 cups flour
1 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1 – 1 1/4 cups strawberries (about 1 lb, washed/chopped)
1/3 cup egg whites (or 2 eggs or 1 mashed banana)
1/2 cup unsweetened applesauce (to replace 1/2 cup oil)
Mix the wet ingredients together then add in the dry.  Fold in the strawberry's when the batter is all mixed.  

This recipe will make 12 regular size muffins or 1 loaf of bread.  I also usually cut the sugar in half.  The strawberry's add enough sweetness I think.

The batter is pretty thick.  

I always use a scoop when I make muffins.  It makes them even and it is way less mess than pouring them in.

It looks like the weather is going to be a little colder this week so I am feeling like some comfort foods.
This week we have scheduled:
Chili with cornbread
Taco Bowls with quinoa
Chicken Sandwiches with pasta salad
Fritatta with a side of Sausage
Veggie hash with Crispy fried eggs


Weekend Plans

I am excited because we have  a really fun weekend planned.  Today after nap the kids and I are heading to my brother and sister in laws house to celebrate my niece's 4th birthday.  She choose to have ravioli for dinner which is a favorite in our house so the kids will be excited.
Saturday we are having some friends over for some playtime and dinner.  We haven't seen these friends in a while so it will be great to catch up.  It should be nice out so we might even get to play outside.
Sunday I am meeting up with a friend from high school that I haven't seen in years.  I am not sure where the time has went but we have lots to catch up on and I couldn't be more excited to see her.
I finished most of the chores during the week so we actually don't have any projects to get done around the house either.  That is a good feeling.  Lots of relaxing and socializing is exactly what we need the next couple of days.

Easter dresses for Evelyn

I have done so much online shopping this past month and I have carts full everywhere.  I need to narrow down some spring outfits for the kids but I have been focusing on an Easter dress for Evelyn.  
So far these are a few of my favorites.  
She also wants to get a little purse but, I haven't started looking for any yet.  I love pastels for Easter. I am also going to get her some new shoes, not sure what color yet depending on which dress I decide on.

I love shopping for Jack.  Jack will need everything for spring and summer and I am excited to start shopping.
Below are some of my favorite staples for him.  I am still finding out what brands fit him the best.  So far I have been loving Baby Gap and Carters for him.  I also do a lot of shopping at the Polo outlet for him.  Or there is a store near us called Von Mauer and they tend to have good sales.  I usually buy his shoes online.  The selection is better and I only get him a couple of pairs at a time so I don't mind spending a little more for then

Rough Week

So the kids had the flu last week.  They were pretty sick all week and by Thursday everyone seemed to be feeling better.  Friday we even did some playing and ran a couple of errands.  Saturday we had some family over and ate lots of yummy food and stayed up way too late playing domino's.  Then Sunday I woke up sick, sick, sick.  I can't believe that I got sick and that I got it worse than the kids did.  So today is Wednesday and I am still battling this.  I am up and moving today but still very slowly.  It has been really really bad and I am excited to start feeling better.  
Our meal plan hasn't worked out because I haven't been eating and Mike has just made the kids quick meals.  I did however grocery shop and have lots of yummy things planned so I am going to bump that all to next week and spend the next couple days just eating soup.  
Next week we all be better, fingers crossed and life will resume as normal.  Can't wait for Spring!



Weekend Plans

Friday Friday.  I have been waiting all week for this day. We are not even doing anything special I am just excited about the weekend.  Well really about having Mike home for 2 whole days.  The kids have been sick all week.  I have done more yucky laundry than I would like to discuss and more disinfecting than any normal person should do.  I am ready for a break.
We had wine Wednesday and vodka Thursday and I think it helped make the week go a little quicker.
We are hanging out at home all weekend and I am happy about that.  Everyone seems better this morning so hopefully another couple of days of rest and we will be back to our normal routine next week.
I plan on finishing up thank you cards from Evelyn's birthday.  I want her to write her name on all of the cards but I don't know if she is going to have the patience to set down and do that.  We will see.
I am also going to do some more pinning on pinterest for some education activities for Jack.  He played on the IPad way too much this last week with being sick and I am going to need to keep him busy and play a bit of catch up.  He is doing ok and is where he should be at for his age but I know we have to keep working on things.
I meal planned yesterday and picked up a few things at the store so I need to finish the grocery list and make sure we have everything for next week.  Oh and also I have been working on some budget friendly healthy meals that I will share in the next could of weeks along with the break down so you can see how much they cost.
That's really about it.  Hanging out and enjoying the family sounds like a great two days.

My favorite type of dinner

Since we talked about my favorite breakfast, I thought I would share what one of my favorite dinners are.
It may look like a mess but it is oh so good.
First I make a turkey burger.  In it I add shredded carrots, finely diced onions, chopped kale, chopped jalapeño, one egg and a little bit of fresh bread crumbs if it seems too wet. For spices I usually add salt, pepper and crushed red pepper.
Then I sauté it in a little bit coconut oil.  I set it on top of a bed of shredded lettuce and top it with pickles, tomatoes, (banana peppers for Mike) and a spicy ranch, which is just ranch with a little bit of hot salsa or siracha.
The sides are zucchini noodles sauté with a tiny bit of cream cheese, parmesan cheese, salt and pepper and then for another side I just some cut cucumbers.

I use very little ranch dressing and very little cream cheese but it is just enough to give it a little bit more flavor and satisfy that savory need that I sometimes want at dinner time.

This is easy to make kid friendly too.  I just leave out the jalapeños in the burgers and then make regular buttered noodles for them.

My favorite breakfast

I get up at 6:00 every morning. I like to have a half hour quietly sipping on coffee before both little ones get up and the day really gets started. I make coffee first thing and I'm starving right away. 
I was in the habit of eating a waffle topped with peanut butter and strawberries every morning but I'm trying to cut back on eating so much bread. 
A few weeks ago I made this 2 ingredient pancake. I've written about it before and although it is really good I wanted more flavor and needed more protein to keep me fuller longer. As it is I eat every 2 hours. I am always hungry. 

So I came up with this and have been eating almost every morning for the past 2 weeks. 

1 banana
1 egg
1 big scoop of peanut butter
Handful of blueberries
Butter for pan

All I do is put a banana in a mixing bowl.  Then add a scoop of peanut butter and the egg.  I mash it all up and put in the blueberries and stir it all together. 
I melt some butter in a 10 inch oven safe skillet and put the banana egg minute in and smooth it out. 
I let it cook for a few minutes to get the bottom somewhat cooked. Then I broil it for a few more minutes to cook it all through. 
Then just put it on a plate and enjoy. I don't put anything on it. It's really flavorful and keeps me full until snack time around 9:00.
