Meal Plan Monday

We are still going strong with our vegetarian meals for dinner.
This week I stocked up on lots of vegetables and plan on roasting them and having them for a couple of meals.  I am also going to try to make a new shrimp recipe from the blog- the natural nurturer.  I am hoping the family likes it.  I don't think the kids have ever tried shrimp.

So here is our plan for the week.

Zucchini noodles with a tomato mushroom sauce
Roasted vegetables (zucchini, mushrooms, red onions, red potatoes, carrots and asparagus) with fried eggs on top
Zesty Lime shrimp with Simple Cauliflower Rice (
Tomato Basil Soup with panini cheese mini sandwiches
